Vegetable Nests in Air Fryer

The vegetable nests in the air fryer are a unique and light dish. This recipe is taken from my book Air Fryer (ed. Gribaudo) like the recipe for fried dumplings in the air fryer and that of eggplant rolls. To make the vegetable nests, just julienne cut mixed vegetables, I used: Napa cabbage, carrots, zucchini, and a spring onion. Depending on the season, you can change the vegetables with fennel, bell peppers, and cabbage. Then, mix the vegetables with egg whites, salt, and flour, shape into nests on parchment paper, and cook in the air fryer. At the end of cooking, add an egg yolk for each vegetable nest and finish cooking for 1 minute. The result of the vegetable nests with eggs in the air fryer pleasantly surprised me.

Ingredients for making egg nests in air fryer

  • 1 carrot (medium)
  • 1 zucchini (medium)
  • a quarter Napa cabbage (about 7 oz)
  • 1 fresh spring onion
  • 1.5 cups all-purpose flour
  • 4 eggs
  • 1/2 teaspoon salt
  • extra virgin olive oil (spray)
  • 2 pinches pepper

What you need

  • 1 Air fryer
  • Parchment paper
  • 1 Bowl
  • 4 Cocotte or spoons

How to make vegetable nests in the air fryer

  • Wash and drain the vegetables well, trim the carrot and zucchini and peel the spring onion. Cut everything into julienne strips and distribute the vegetables in the bowl.

    Separate the yolks from the whites, letting the whites fall into the vegetables and placing each yolk in a small bowl or in the well of a spoon. Set the yolks aside and focus on the vegetables, add the salt, the flour and mix very well.

  • Spread a sheet of parchment paper in the basket of the air fryer, distribute 4 piles of vegetables and, with the back of a spoon, make a well in the center of each pile. If you prefer and to make the operation easier, you can cut 4 squares of parchment paper, prepare the vegetable nests, and then put them in the basket.

  • Program the air fryer to 450°F*, insert the vegetable nests and start cooking for 10 minutes.

  • Slide a yolk into the center of each nest of vegetables, salt, pepper and cook for another 1 minute at 450°F.

    Serve your vegetable nests immediately and enjoy your meal!

Additional tips for vegetable nests in air fryer

*If your air fryer does not reach 450°F, cook the nests for 12 minutes at 400°F. The yolks will need just under 2 minutes.
