Vegetable Ragù in jar cooking is one of my first recipes for sauces and salsas in jar cooking. Ingredients to make summer ragù in jar cooking
Note: You will need 400 g of wilted mixed vegetables. Choose the proportions according to your taste. The gross weight of the vegetables should be 600 g.

What you need

- 1 Microwave oven
- 1 Jar one liter with thin or thick seal
- 1 Bowl
- 1 Cutting board
- 1 Knife
Procedure
Wash and clean the vegetables, cut them into regular pieces, and distribute them in the bowl. Finely slice the onion and add it to the vegetables, along with a pinch of salt and the oil. Mix and wilt the vegetables in the microwave for 5 minutes at 800 watts.
Distribute the still hot vegetables in the jar, add the tomato pulp, aromatic herbs, and the other pinch of salt. Mix and clean the rim of the jar. Close and clip.
Place the jar in the microwave and start cooking for 10 minutes at your power given by the water test, I use 600 watts. At the end of cooking, leave the closed jar to rest for an hour. During resting, the vegetable ragù in jar cooking will continue to cook at low temperature, making it delicious and forming a vacuum in the jar. Once it is at room temperature, you can store the ragù in the fridge for 15 days to a month*.

Storage times vary depending on the jar used, the thick seal one (Bormioli Fido and Korken Ikea) will allow you to store the ragù for a month.
