Recipe for vegetable rolls in air fryer, a quick vegan recipe with Middle Eastern flavors. After trying eggplant rolls, pepper rolls, and chicken rolls in an air fryer, today I want a vegan version to make rolls in the air fryer.
The recipe is very simple: I chopped scallions, carrots, shiitake mushrooms, and tempeh into pieces. I placed them in a baking tray and braised them in the air fryer. Meanwhile, I blanched some chicory leaves, or you can use Chinese cabbage or savoy cabbage leaves. I stuffed the leaves with the vegetables and tempeh, rolled them up, and cooked them in the air fryer. Finally, I served the vegetable rolls with an oriental sauce, and you will find the recipe at the end of the article.

Ingredients for 4 rolls
- 4 leaves sugarloaf chicory (or Chinese cabbage or savoy cabbage)
- 100 g tempeh
- 2 carrots
- 2 fresh scallions
- 5 Shiitake or Shiitake mushrooms, dried
- 1 chili pepper
- 1 clove garlic
- 2 pinches fresh ginger (or powdered)
- 2 teaspoons sesame seeds
- 2 tablespoons extra virgin olive oil
- 2 tablespoons soy sauce
- 2 tablespoons soy sauce
- 1 tablespoon extra virgin olive oil
- 2 tablespoons rice vinegar
- Half fresh scallion
- 2 l water (cold)
- 10 cubes ice
Necessary Tools
- 1 Air Fryer
- 1 Baking Tray
- 1 Cutting Board
- 1 Knife
- 1 Pot
- 1 Bowl
Procedure
Wash and trim the vegetables, peel the garlic clove. Soak the shiitake mushrooms.
Slice the scallions, cut the carrots lengthwise in half and then slice them. Chop the garlic clove and chili pepper and distribute everything in the baking tray.
Take the block of tempeh and pat it dry with kitchen paper.
Cut the tempeh into pieces and add it to the vegetables.
Squeeze the mushrooms well and then cut them into pieces.
Add the mushrooms to the vegetables and season with 2 tablespoons of oil, soy sauce, 1 teaspoon of sesame seeds and mix well.
Cook the vegetables in the air fryer at 392°F for 8 minutes, stirring well after 6 minutes.
Meanwhile, bring water to a boil in the pot. Prepare the bowl with water and ice. Remove the larger chicory leaves, wash them, and then dip them one at a time into the boiling water.
Just let them soften, take them out with a slotted spoon and dip them in the ice water. Do the same with the other leaves.
Drain the leaves from the ice water and lay them on a cutting board.
Take the braised vegetables from the air fryer and mix them.
Fill each leaf with a quarter of the vegetables and roll it up tightly to form a large roll. Continue this way until all ingredients are used.
Place the vegetable rolls in the baking tray and brush them with the remaining tablespoon of oil. Sprinkle them with the other teaspoon of sesame seeds and cook the vegetable rolls in the air fryer at 356°F for 10 minutes, turning them halfway through cooking.
While the vegan rolls cook in the air fryer, prepare the accompanying sauce. Pour the oil, soy sauce, and rice vinegar into a small bowl. Add the sliced scallion and mix.
Cut each vegetable roll in half and enjoy it dipped in the oriental sauce.
