Aamras – easy mango recipe

Aamras is a typical Indian drink made by blending a ripe and juicy mango with milk (plant or cow), sugar, and ground cardamom. Traditionally, it is accompanied by Indian fried bread (Poori) to dip pieces into the preparation. Aamras is almost a mango juice extract, also known as Keri or Carrie which translates to mango.

  • How to care for the mango?

    Choose a well-ripened mango that yields to touch, then wash it. Here is the video on how to care for the mango.

    Cut the two fleshier parts around the stone, the so-called cheeks.

    With the help of a knife draw a grid of horizontal and vertical lines on the pulp, without reaching the peel, which should remain intact. Then extract the diced pulp by turning the peel inside out. Finally, peel the remaining mango around its seed and retrieve the remaining pulp.

    Mango Mousse

    With an immersion blender or simply with the palm of your hands, mash the mango pieces until you create a puree, a more or less smooth creamy dessert.

    If desired, decorate with almond flakes or chopped nuts (cashews, hazelnuts, walnuts, pistachios).

    AAMRAS – mango drink

    Blend the mango pulp with milk (or water or ice cubes), sugar (adjust the quantity based on the sweetness of the individual fruit), and powdered spices (cardamom and dry ginger are the most traditional, but you can also opt for cinnamon, Tonka bean, paprika, chili, vanilla, or saffron threads).

    Place the drink in the refrigerator for at least half an hour or up to two hours before enjoying. If using ice, it’s not necessary.

  • TIP: Mangoes tend to overheat, to reduce this quality it is better to soak them in cold water for a couple of hours (as done with watermelons). Before using them, drain and dry them with a cloth.

STORAGE of Aamras

Place it in an airtight container and store it in the refrigerator for up to 3 days.

For longer storage in the freezer, freeze it in individual portions and thaw in the refrigerator before serving.

Or make cross-sectional cuts in the pulp without cutting through the skin and then flip the skin outwards to get slices or cubes of mango ready to eat.
