Fried Polenta

  • 1 1/4 cups cooked polenta
  • as needed extra virgin olive oil

If you prepare polenta at home (instant or classic), a few minutes before the end of cooking, you can enrich it with herbs such as dried garlic, oregano, rosemary, sage, and thyme, along with cheeses or grated Parmesan.

For an even more intense flavor, add cubes of speck and pancetta (for omnivores only).

Fried Polenta

  • Prepare the polenta following the package instructions for the instant one, or cook the classic polenta until achieving a thick and compact consistency. Once ready, pour the polenta into a greased baking dish, level it well, and let it cool to set.

  • Then, cut it into sticks, triangles or thin slices: the more outer surface it has, the crispier it will become.

  • Place the polenta sticks in the air fryer basket, in a single layer. Brush the polenta pieces with a bit of olive oil, or use the dedicated oil spray.

  • Insert the basket into the fryer and start cooking, fry for 8-10 minutes at 390°F. There’s no need to turn it.
    If desired, at the end of cooking, season the fried polenta with salt and rosemary.

  • In the oven: preheat the fan oven to 390°F and cook the polenta sticks for 15-20 minutes, turning them halfway through cooking.
    In a pan: heat some oil in a pan and fry the polenta sticks for 3-4 minutes per side, until golden brown.

    In oil: heat plenty of oil in a pan and fry the polenta sticks for 6-8 minutes. Then, drain the polenta sticks on a plate covered with paper towels to remove excess oil.

STORING fried polenta

Air fryer (or oven) fried polenta keeps well in an airtight container for up to 2 days. To maintain crispness, reheat in a fan oven or air fryer for a few minutes.
