Appetizer with Apples and Cheese

To quickly prepare this appetizer: use toasted bread slices (whole grain) instead of the salted biscuits.

  • 3.5 oz butter (at room temperature)
  • 1.25 cups whole wheat flour (organic)
  • 0.8 cups all-purpose flour (or other whole wheat flour)
  • 1 tsp thyme (and/or oregano)
  • 0.25 tsp fine salt
  • 2.8 oz Grana Padano PDO (without animal rennet)
  • 1 egg (about 55 g)
  • 4.2 oz gorgonzola (and mascarpone or other creamy cheese)
  • 2 tbsp milk
  • 2 apples (red or green)
  • to taste honey (or agave syrup)
  • 7 walnuts

Appetizer with Apples and Cheese

  • Prepare the salted biscuits

    In a bowl place: 3.5 oz of soft butter in pieces, 1.25 cups of organic whole wheat flour, 0.8 cups of all-purpose flour, preferred spices and a little salt.

    Preheat the static oven to 356°F

    With your fingertips, work the dough until it becomes sandy, then add 2.8 oz of grated Grana and the egg. Finish kneading on the work surface.

    With the help of a rolling pin, roll out the salted shortcrust pastry on the lightly floured work surface. Form the disks (I made 14 circles d.7) and place them on parchment paper on the baking tray.

    Bake in the preheated static oven at 356°F for about 20 minutes or until their edges are lightly golden.

    Once cooked, remove them immediately from the oven and let them cool at room temperature, as they cool they will solidify.

  • Prepare the cheese sauce

    In a cup place 4.2 oz of creamy cheese (I used gorgonzola and mascarpone), dilute with 2 tbsp of milk. Mix the cream until homogeneous.

    Before serving this cold appetizer: spread one side with the cheese cream and place apple slices on top.

    If desired, add flavor with a drizzle of honey and/or some chopped nuts on top.

VARIANTS of appetizer with apples and cheese

For an EASY and LIGHT version:

– use an apple slice as the base and spread the cheese cream on top. Garnish with a walnut kernel and a drizzle of honey or agave syrup

For a QUICK version:

– bake in a preheated oven at 356°F for about 10 minutes, slices of baguette with a piece of melting cheese on top for a few minutes, then decorate with apple slices, a drizzle of honey and walnuts before serving and enjoying

– place a little speck or smoked salmon between the creamy cheese and apple slices
