Aromatic Green Salt – Recipe

The aromatic green salt is an excellent seasoning that allows you to reduce the use of salt in cooking. The aromatic herbs mixed with the salt emit a pleasant fragrance and make this seasoning very flavorful; a little goes a long way to add aroma.
The green salt can be used on everything, great for flavoring any dish and vegetable recipe.

Aromatic Green Salt


The amount of aromatic herbs that can be used compared to salt ranges from 10% to 30%
I used about 20%

  • 14.1 oz salt (fine iodized)
  • 2.8 oz aromatic herbs (fresh)
  • 0.2 oz garlic (optional)
  • 0.7 oz white onion (optional)

Adjust the amount of herbs according to your taste. I used these aromatic plants: rosemary, sage, parsley, chives, and savory; along with garlic and onion.

Aromatic Green Salt

  • Pick the fresh herbs and keep only the leaves, wash them and let them dry very well on a cloth for at least two hours, stirring occasionally.

    In the bowl of the chopper place the salt with some of the herbs and chop, adding more as they are incorporated. You will get a moist mixture, as the salt absorbs the moisture from the fresh herbs.

    Put the green salt on a baking tray lined with parchment paper and let it dry in a static oven at 104°F – 113°F for about 1 – 2 hours, crumbling and stirring it occasionally with a fork. Turn off the oven and leave it inside overnight to dry.

    In the morning, when the aromatic green salt is well cooled, place it in sterilized and dry glass jars with airtight lids.

    AIR DRYIt can also be dried on a tray placed in the shade in a dry place for a few days, until ready. In this case, I recommend not adding the onion.

    DO NOT DRY and store in FREEZER – Once everything is ground, you can choose to store the green salt in the freezer without drying it.

    TIP to prepare aromatic green salt on a nice sunny, non-humid day.

Quick Aromatic Salt

To prepare a SUPER FAST spiced SALT, use already dried and powdered herbs and/or spices as desired, to grind whole ones use a coffee grinder or the Thermomix.

STORAGE

The aromatic green salt can be stored for years at room temperature.
