Alternatives with Black-eyed Peas

BLACK-EYED PEAS WITH POTATOES: towards the end of cooking add diced raw potatoes (and if desired some onion slices) and finish cooking before serving.

Alternatively, boil the beans and potatoes separately, then flavor the already cooked beans and potatoes (cooked and cooled) cut into uniform pieces (cubes or slices) in a sauté of onion.

SALAD with black-eyed peas: boil the black-eyed peas (better in a pressure cooker for faster cooking) and serve combined with whole grains (respecting the cooking times of the legumes and grains, they can be cooked together) and seasonal vegetables (in winter: carrots, leeks, celery, and fennel – in summer: cucumbers, onion, peppers, tomato, zucchini), for a unique and complete dish. Season with oil, lemon, basil, and mint.

For a Pugliese version, you can prepare a healthy black-eyed pea soup, in dialect “Pignata te pasuli cu n’ecchiu“.

Omnivore Variants

In Cremona, black-eyed peas with pork rind are cooked, in the Cremonese dialect “fasulin de l’öc cun le cudeghe“. Moreover, in much of Lombardy, on All Souls’ Day, it is traditional to prepare the “Fasulin de l’oc con le cuteghe e i salamì dai mortc” to accompany with new wine and freshly baked bread.
