Celery salt can be easily prepared at home. If you wonder where to buy it and its cost, I can tell you that it is available at a reasonable price in organic stores (like Naturasì), at Coop or online. Also great is the organic lovage salt.
In my opinion, the one extracted from the leaves has a milder flavor, while the one made from the stalks has a stronger aroma. Also, leaves are often considered waste, and this “no waste” recipe allows you to use them instead of discarding them.

Celery Salt
First, wash the celery thoroughly, then chop it with an electric mixer or cut the leaves and/or stalks into thin pieces (after removing any outer filaments with a peeler). Let everything dry on a cloth for a few hours.
HOW TO DRY CELERY SALT?
Air drying
– whole stalks can be dried in the sun for a few days
– leaves can be dried in a dry and shaded place for a few days or until they are completely dry
With a dehydrator
Place the stalks on the grids, covered with parchment paper, on the lower levels (for longer drying time), while the leaves on the higher trays. Dry the celery at 108°F for about 9 hours (or longer if whole pieces), alternating the grids as needed, since the higher ones receive less heat.
Dry in the oven at low temperature (around 104-122°F)
Place the chopped celery leaves or the stalk pieces (small and regular) on the oven tray in a single layer.
Dry in a ventilated oven at 104°F for about one or two hours, preferably leaving the oven door ajar by inserting a spoon handle between the oven and its door. After half an hour, mix with a fork.
Then turn off the oven and leave the celery powder inside for half a day or more. After that time, crumble it and dry at low temperature for another hour or until it is well dried.
Once dry, you can grind it again for a finer result and to achieve the preferred granularity, I didn’t do it.
STORAGE
Celery salt keeps in a dry, closed container, at room temperature and away from light and heat, for a couple of years. Absolutely avoid storing in the fridge or freezer.
