Chicken with Japanese Loquats – Savory Recipe

Chicken strips with Japanese loquats are a quick recipe to prepare, an unusual and tasty combination that will surprise you for its taste and color. Generally, ripe loquats are used to make jam, but Grandma Benedetta prefers to use them in savory recipes for their tart yet slightly sweet flavor.

Chicken with Loquats

As FRUIT, you can alternatively use: apricots, melon, peaches, or pears.

  • 1 white onion (about 100 grams)
  • 1 tablespoon peanut oil (or extra virgin olive oil)
  • 3 tablespoons water (or as needed)
  • 14 oz chicken breast (in cubes or strips)
  • to taste salt
  • to taste nutmeg (or thyme, oregano…)
  • 12 oz loquats (Japanese)
  • 10 black olives (optional)

Chicken with Loquats

  • Peel, wash, and thinly slice the onion, then stew it in water and oil until soft and transparent.

    Meanwhile, cut the chicken breast into even pieces (or strips).

    Place the meat in the pan with the onion and brown it over high heat, season with salt and your preferred spices.

    While the meat is cooking, peel and pit the loquats, also removing the inner hard skin near the pit. Cut the fruits in half or quarters.

    Add the loquats to the meat and finish cooking. Flavor with sliced olives.

VARIATIONS

As an alternative to olives, try adding some previously soaked raisins, to give an extra sweet and sour note to this oriental-style main dish.

During cooking, add different herbs than those suggested, such as sage leaves or rosemary needles.

To make the meat creamier, coat it in a little flour before browning it in the pan.

STORAGE of chicken with loquats

Store in the refrigerator, covered with plastic wrap or in a container with a lid (the cooking pan with its lid is also fine). It keeps for 3 days; before consuming, reheat on the stove or in the microwave.
