Hot Chocolate Mix
- 3.5 oz dark chocolate (vegan)
- 3.5 oz unsweetened cocoa powder, lactose-free
- 1.4 oz potato starch (or other thickener, such as frumina or rice starch)
- 1.1 oz cornstarch (maizena) (or other thickener like potato starch or rice flour)
- 5.3 oz sugar (or less for a light version)
- 1 pinch fine salt
- to taste star anise (in powder)
- to taste ground cinnamon
- to taste ground cloves
- to taste gluten-free coconut flour
- to taste chili powder (or long pepper)
- to taste vanilla
- to taste ground ginger

DIY Hot Chocolate in a Jar
Grate the dark chocolate finely, alternatively cut the dark chocolate into pieces and pulverize it with the blades in a mixer along with the sugar. Use the chopper (or bimby) in pulses so as not to melt the chocolate (if it doesn’t become powder, it’s okay, it will completely melt during the hot chocolate preparation).
In a bowl, place all the ingredients and mix them well with a hand whisk.
Place the hot chocolate mix in a 500 ml glass jar or airtight container.
STORAGE
The hot chocolate mix can be stored for several months in an airtight container, in a cool and dry place.
How to prepare hot chocolate in a cup?
Pour 3 tablespoons of mix (about 30 g) into a saucepan and dissolve it by gradually adding 150-175 grams of cold milk (plant-based for vegans or intolerants). Stir with a whisk to avoid lumps.
Put on the fire and stir continuously. Cook gently for 5–8 minutes or until the desired thickness is reached.
Pour the hot chocolate into the cup. Serve with whipped cream or garnish with a little coconut flour or cinnamon powder. Enjoy the thick hot chocolate.

Use water to partially replace the milk, or use less sugar.

How to store leftover hot chocolate?
It can be stored in the fridge for up to 2 days, for longer preservation, it can also be frozen. When consuming, add a tablespoon of fresh milk and gently reheat.
