Pink or Cocktail Sauce
For a quick preparation: mix ready-made mayonnaise with a quarter of the weight of ketchup.
- 2.1 oz mayonnaise (light or vegan)
- 0.35 oz tomato paste (or 0.5 oz of ketchup, or tomato sauce)
- 0.35 oz milk (plant-based)
- Half tablespoon white wine vinegar (or apple cider vinegar, or lemon or orange juice)
- 1 pinch paprika (or chili powder or Tabasco)
- 1 pinch sugar (or honey)
VARIATIONS:
– instead of milk, use natural yogurt or whipped cream
– for a cocktail sauce without mayonnaise, replace it with plain Greek yogurt
– use egg-free mayonnaise for those intolerant and for vegans
– flavor with mustard (0.07 oz) or little Worcestershire sauce (0.035 oz)
– instead of mayonnaise, use horseradish as Americans do
– add a splash of brandy, cognac, or whiskey
– integrate with finely chopped or grated onion
– add a tablespoon of finely chopped parsley (or chives or fennel)
EASY Pink Sauce
It’s important to use cold ingredients (from the fridge), this way you can immediately check the sauce’s thickness.
Simply place all the ingredients in a bowl and mix well to eliminate any lumps, creating a nice smooth cream with the right consistency.
Taste to adjust flavor and thickness according to your preference.
To allow the flavors to blend together, let it rest for at least half an hour in the refrigerator before serving.
