Variations

° Use walnut and/or pistachio flour or coconut flour for a different flavor.

° Choose refined flavors, such as powder of: organic citrus peel, Tonka bean, long pepper, chili pepper, allspice, ginger.

° Fill the tips of the cookies with dark chocolate and, if desired, sprinkle some coconut flour or chopped nuts on top of the warm chocolate.

INGREDIENTS

– 2 oz soft butter

– 1 cup all-purpose flour

– 1/3 cup almond flour (or hazelnut)

– 3 tbsp sugar

1/3 tsp spices (for flavoring: vanillin, vanilla seeds, organic citrus peel, cinnamon, or Christmas mix)

– 1 medium egg yolk

* The nut flour can be partially or entirely replaced with other white flour or coconut flour
