LUPIN CREAM

  • 8.8 oz lupins (pre-cooked naturally – 5.3 oz shelled)
  • 2 tbsps lemon juice
  • to taste turmeric powder (half a teaspoon)
  • to taste sweet paprika (half a teaspoon)
  • to taste chili powder (half a teaspoon)
  • to taste rosemary (dried powder – optional)
  • 3.5 tbsps extra virgin olive oil
  • 0.2 cup water (or more)
  • to taste fine salt (only if necessary)

Prepare LUPIN CREAM

  • Take the lupins, rinse them under cold running water and remove the skin by cutting them on one side with the tip of a knife.
    Once shelled, place them together with your preferred spices (turmeric, curry, paprika, chili, rosemary…) in the chopper’s bowl (or Thermomix). Blend.
    Gradually add the lemon juice, extra virgin olive oil, and water until a creamy consistency is achieved (this hummus will remain slightly grainy).
    Place the lupin cream in a bowl and serve with crackers, crostini, or rice cakes.

VARIATIONS for lupin cream

This sauce is excellent:
° more liquid for raw vegetable dipping
* thicker to stuff sandwiches, canapés, and sandwiches
° as a sauce for falafel or meatballs
* to accompany baked, fried, or grilled vegetables
° as a mayonnaise substitute

The skin of lupins is not eaten because it is rich in cellulose, which is difficult to digest.

    According to nutritionist La Civita, “Lupins are legumes rich in nutritional benefits. They are a source of plant proteins, low-glycemic-impact carbohydrates, soluble fiber, and a small amount of fats, including ‘good’ polyunsaturated fats like omega 3 and omega 6. They also contain vitamin C, B vitamins, and minerals, including potassium, iron, calcium, and zinc. Naturally gluten-free, and therefore suitable for celiacs, lupins are very versatile in the kitchen and are also suitable as a quick snack. As a precaution, if you buy them in brine, rinse them well!”

    Lupins are legumes rich in proteins and fibers, but they also contain a substance called lupinine, which can be toxic if consumed in large quantities. Therefore, people with allergies to legume proteins, such as soy or peanuts, should avoid lupins. Additionally, individuals with kidney problems should consult a doctor before consuming lupins, as they contain high levels of potassium. However, for most people, lupins can be consumed as part of a balanced and healthy diet.
