– 4 medium eggs
– 1 1/2 cups sugar (1 cup + 1/2 cup)
– 1 1/4 cups all-purpose flour
– 1 1/4 cups rice flour (or cornstarch)
– half a packet of baking powder
– a pinch of salt
– the zest of one organic lemon (or vanilla) – optional
– 1/3 cup peanut oil
– 1/3 cup water

Paradise CREAM
– 3/4 cup fresh liquid cream (dairy section)
– 1/4 cup condensed milk (or 2 teaspoons of powdered sugar)
– 1 tablespoon of honey (optional)
METHOD
Place the bowl and beaters in the refrigerator at least 1 hour before preparation. The tools you use to whip the cream must be very cold to whip it optimally.
– with CONDENSED MILK – Start whipping the cream at low speed and then increase it to maximum, slowly adding the condensed milk and optional honey.
– with POWDERED SUGAR – Place the very cold cream in the cold bowl, sift the powdered sugar over it. Start whipping the cream at low speed and then increase to maximum speed, stopping before it turns into butter.

STORAGE Paradise Cake
The Paradise cake without filling can be stored at room temperature for up to a week; if needed, it can be frozen wrapped in plastic wrap (it lasts 3 months in the freezer). Slice it horizontally while still cold, as it is easier.
Once filled with cream, it keeps for a maximum of 3 days in the refrigerator.
