Stewed Carrots
- 1.1 lbs carrots
- 1 drizzle extra virgin olive oil (or peanut oil)
- 1 onion (small)
- 7 oz tomato sauce (or fresh cherry tomatoes)

- to taste aromatic herbs (rosemary, oregano, thyme, chives, chili pepper, or garlic powder)

Stewed Carrots with Tomato
In a saucepan, stew the onion cut into thin slices with a drizzle of oil and some water.
Let it cook for a few minutes, then add the peeled tomatoes (or chopped tomatoes), salt, and preferred herbs.
Clean the whole carrots (they can be lightly scraped with a smooth blade knife, so they are not peeled), wash and cut into slices (or sticks).
Add the carrots to the sauce. If desired, lightly sprinkle with wine (or beer).
Cook the carrots in the stew for another 15 minutes or until the desired degree of cooking is achieved.
Serve with a sprinkle of grated cheese (or nutritional yeast for vegans).
