Stewed Carrots with Tomato

Stewed carrots with tomato are an easy and tasty recipe, featuring carrots cooked in a stew with tomato sauce. A pizzaiola-style side dish to make this vegetable appealing even to the youngest.

Tomato carrots are versatile and can be customized with the addition of grated cheese, fresh aromatic herbs, or a sprinkle of chili pepper for a spicy touch. They are ideal for those seeking a flavorful, healthy, and easy-to-prepare dish.

I found the recipe in an old cookbook “Il Buongustaio Liebig” by A. De Bernardis.

Stewed Carrots with Tomato

  • In a saucepan, stew the onion cut into thin slices with a drizzle of oil and some water.

Let it cook for a few minutes, then add the peeled tomatoes (or chopped tomatoes), salt, and preferred herbs.

Clean the whole carrots (they can be lightly scraped with a smooth blade knife, so they are not peeled), wash and cut into slices (or sticks).

Add the carrots to the sauce. If desired, lightly sprinkle with wine (or beer).

Cook the carrots in the stew for another 15 minutes or until the desired degree of cooking is achieved.

Serve with a sprinkle of grated cheese (or nutritional yeast for vegans).
