Baked Cod Bites

It’s always the right time to enrich your recipe book with something new. Today, the new entry features baked cod. In this dish, the fish bites are coated in a slightly spiced flour that makes them really delicious, and their preparation is really simple. What can I say… small expenditure, but great satisfaction.

Ingredients for Baked Cod Bites

I used frozen cod fillets, which I moved from the freezer to the refrigerator the night before.

  • 21 oz cod fillets
  • 1 lemon
  • 3 tbsp butter
  • Half tsp smoked paprika
  • Half tsp ground coriander
  • 0.5 cup flour
  • 1 clove garlic
  • 1 bunch parsley
  • salt
  • black pepper

Preparation of Baked Cod Bites

  • First, melt the butter in a small pan, then add the lemon juice, mix, turn off the heat, and let it cool slightly. 

  • Pour the flour into a plate, add half a teaspoon of smoked paprika, half a teaspoon of ground coriander, a pinch of salt, and mix.

  • Lightly salt the cod fillets and brush them on both sides with the lemon butter.

  • Then cut them into pieces and pass each piece in the spiced flour.

  • Transfer the cod bites to a baking dish previously brushed with some lemon butter.

  • Finally, peel a clove of garlic, remove the central part, chop it finely, mix it with the remaining lemon butter, and pour the mixture over the fish in the baking dish.

  • Bake in a preheated static oven at 392°F for 20/25 minutes.

    Remove from the oven, garnish with finely chopped parsley and freshly ground black pepper, and serve the baked cod bites immediately, hot, accompanied by lemon slices. Enjoy! Paola
