It’s very easy to prepare: few ingredients, lots of flavor, and no stress! An economical and comforting recipe that will make you look good without much effort; perfect for a Sunday lunch, a dinner with friends, or any time you want to serve a comfort food that smells like home. And let’s not forget another aspect: it’s practically a complete dish! One bake and lunch/dinner are sorted. So… are you ready to bake this goodness? Ingredients for Baked Pasta with Mushrooms
- 12 oz short pasta (any shape)
- 1.1 lbs champignon mushrooms
- 2 mozzarella (4.4 oz each)
- 1 shallot
- 0.5 cup tomato puree
- Grana Padano cheese (or Parmesan)
- extra virgin olive oil
- salt
- black pepper
- 1.25 cups milk
- 1.8 tbsp butter
- 1.8 tbsp flour
- salt (a generous pinch)
- nutmeg (a generous grating)

- 1 Baking dish
Preparation of Baked Pasta with Mushrooms
Remove the earthy base from the stems of the champignon mushrooms, quickly wash them under running water, pat them dry with kitchen paper, and slice them thinly.
In a large pan, heat a few tablespoons of oil and fry the finely chopped shallot. Let it sizzle for a moment, then add the mushrooms. Salt and pepper to taste and cook for about ten minutes, stirring occasionally.
Then add the tomato puree and the béchamel sauce.
Mix carefully and adjust salt if necessary.
Meanwhile, cook the pasta in plenty of salted boiling water; drain it fairly al dente and transfer it to the sauce pan, stirring to blend all ingredients well.
Finally, also add the mozzarella previously cut into cubes and mix again.
Transfer everything to a previously greased baking dish and sprinkle the surface with grated cheese.
Bake in a preheated oven at 392°F for about 15 minutes or until it has turned a nice golden color.
Serve the baked pasta with mushrooms and mozzarella hot, bringing it to the table directly in the baking dish. Enjoy! Paola
