Are you looking for a tasty dish? Then… here it is! These baked peppers are a truly amazing side dish. Incredibly simple to prepare, they are unbelievably delicious, precisely because of that wonderful crust that forms during cooking. When I make them, not a crumb is left, and if you try the recipe, you’ll understand why. If you need to speed up the process, using frozen grilled peppers can be a solution.

Ingredients for Baked Peppers
As mentioned in the introduction, it’s also possible to use frozen grilled peppers. In this case, let them thaw a bit in the refrigerator.
- 1 red bell pepper
- 1 yellow bell pepper
- 2 tablespoons breadcrumbs (+ extra for the baking dish)
- 2 tablespoons Grana Padano cheese (or Parmesan)
- 1 clove garlic
- 1 bunch parsley
- extra virgin olive oil
- salt

- 1 Cast iron pan ribbed
- 1 Baking dish oven-safe
- Brush
- Mezzaluna
- 1 Small bowl
Preparation of Baked Peppers
Wash the peppers, cut them into strips, remove all the filaments and seeds inside, and grill them on a lightly oiled ribbed cast iron pan until they are soft. If you prefer, you can bake them whole in the oven. Once they are roasted, transfer them to a bag and let them rest for a few minutes before peeling and cutting them into strips.
Grease an oven-safe baking dish with oil and sprinkle it with breadcrumbs.
Peel the garlic clove, remove the inner core, and finely chop it with the parsley using a mezzaluna.
In a small bowl, mix two tablespoons of grated cheese with two tablespoons of breadcrumbs and add the chopped garlic and parsley.
Remove the skin from the pepper strips (this will make them more digestible) and place them in the baking dish in a single layer; then lightly salt them.
Finally, distribute the mixture over the peppers and finish by drizzling everything with a bit of oil.
Place the baking dish in a preheated static oven at 356°F (180°C) and bake the peppers for about ten minutes + a few minutes in grill mode. A nice golden crust should form.
