I haven’t specified exact quantities of the ingredients because it all depends on how many potato peels you have: you can easily eyeball it.
Before peeling, always wash the potatoes very well.
You can freeze the potato peels; this way you can make this recipe when you have a good amount.
You can sprinkle your baked potato peels with turmeric, curry, or other spices of your choice.

- Grated Grana Padano (or Parmesan)
- breadcrumbs
- oregano
- extra virgin olive oil

Preparation of Baked Potato Peels
Place the peels (already well cleaned) in a bowl full of water in which a teaspoon of baking soda has been dissolved and let them soak for at least half an hour.
Then, drain them and rinse them very well under running water.
Transfer them onto kitchen paper and dab them until they are perfectly dry.
Then arrange them on a baking sheet lined with parchment paper without overlapping them. Salt and pepper them to taste.
Finally, sprinkle them with grated cheese and breadcrumbs and drizzle with a little oil.
Bake the peels in a preheated convection oven at 356°F for 15 minutes; then turn off the oven and leave them inside for another 10 minutes.
