Baked Scallops

How delicious baked scallops are. They are usually served as an appetizer during holidays or dinner parties. However, I often prepare them because everyone likes them, and they always make me look good. The enticing crust that forms during cooking is a real delight, and if you try them, you’ll agree with me. Also, they are very simple to make and very quick. Ingredients for 8 Baked Scallops

In this recipe, I used frozen scallops (without shells) that I transferred from the freezer to the refrigerator the night before.

You can find the shells for sale in many supermarkets. Once purchased, they can be reused continuously. You can also find them online by clicking HERE.

  • 8 scallops
  • 2/3 cup breadcrumbs
  • 1 clove garlic
  • 1 tbsp Grana Padano cheese, grated (or Parmesan)
  • 1 bunch parsley
  • brandy
  • extra virgin olive oil
  • salt

Tools

  • Mezzaluna
  • 1 Bowl
  • 8 Scallop shells
  • 1 Baking tray

Preparation of Baked Scallops

  • Peel the garlic clove, remove the central core, and finely chop it together with the parsley.

  • Transfer the mixture into a bowl, add the breadcrumbs, grated cheese, a generous pinch of salt, and mix.

  • Then add a splash of brandy and 2 tbsp of olive oil and mix well.

  • Place the scallops in the shells, cover them with the prepared mixture, and drizzle with a little olive oil.

  • Bake in a preheated static oven at 350°F for 10 minutes + a few minutes on grill function. They should be nicely golden when done.

  • Serve the baked scallops immediately, hot. Enjoy! Paola
