Ingredients for Baked Tomatoes
- 1.75 lbs plum tomatoes
- A few fresh scallions
- 1.75 oz ricotta (aged)
- 0.7 oz capers
- A few leaves basil
- extra virgin olive oil
- salt
- black pepper

- Grater coarse holes
Preparation of Baked Tomatoes
Clean the scallions by removing the roots and outer sheaths. Wash them, pat them dry with paper towels, and cut the thicker ones in half lengthwise.
Then, use scissors to cut some green stems into rings.
Rinse the capers under cold running water and dry them by patting with paper towels. Both salted and pickled capers work well.
Wash the tomatoes, dry them, and cut them in half lengthwise.
Grease a baking tray with a drizzle of oil and place the tomatoes with the cut side up. Add the scallions and the cut stems, then salt and pepper to taste.
Scatter the torn basil leaves and the capers here and there.
Finally, sprinkle the surface with aged ricotta shredded with a coarse-hole grater and drizzle with a bit of oil.
Cover with foil and bake in a preheated static oven at 400°F for 20 minutes; then remove the foil and continue cooking for another 10 minutes.
Remove the tray from the oven and let the baked tomatoes cool slightly before serving. Enjoy! Paola
