Baked Zucchini and Cherry Tomatoes

Today I suggest a side dish made of baked zucchini and cherry tomatoes. It’s made super delicious by the anchovies and mozzarella mixed with the vegetables. And let’s talk about the crust that forms on top? Mmmmmmm! It is also a dish that can be easily improvised given the simple ingredients that make it up. A recipe to repeat often, in short! A recipe that will not disappoint you. Shall we bet?

Ingredients for Baked Zucchini and Cherry Tomatoes

  • 1 lb lbs zucchini (weight without waste)
  • 12 oz oz cherry tomatoes (weight without waste)
  • 1 mozzarella
  • 4 anchovy fillets in oil
  • A few leaves basil
  • 1 clove garlic (optional)
  • 1/2 cup cup Grana Padano cheese, grated (+ extra for the top)
  • 1/3 cup cup breadcrumbs (+ extra for the top)
  • oregano
  • extra virgin olive oil
  • salt
  • black pepper

  • 1 Bowl large
  • 1 Mezzaluna
  • 1 Baking dish

Preparation of Baked Zucchini and Cherry Tomatoes

  • Trim the zucchini, wash them, pat dry with kitchen paper, and cut them into not too large cubes.

  • Wash and dry the cherry tomatoes and cut them into small pieces.

  • Place these vegetables in a large bowl.

  • Add the mozzarella cut into cubes and the basil leaves torn by hand. I recommend using pizza mozzarella, the kind sold in blocks. It’s drier than classic fiordilatte and releases less water when cooking.

  • Using a mezzaluna, chop the anchovy fillets together with the garlic (if you don’t like garlic, you can skip it).

  • Add this mixture to the vegetables and mix well.

  • Then add the grated cheese, breadcrumbs, a generous pinch of oregano, and a drizzle of oil and mix everything very well. Salt and pepper to taste.

  • Pour the mixture into a baking dish previously greased with oil and sprinkled with breadcrumbs and level it.

    Then sprinkle the surface with more breadcrumbs and more grated cheese.

  • Bake in a preheated static oven at 392°F for 20 minutes plus a few minutes on grill function until the surface is golden brown.

    Remove the baking dish from the oven and let it cool slightly before serving. Enjoy! Paola
