There are dishes that do not need any particular introduction because they speak for themselves. These beans in homestyle sauce fall into that category. They are simple, flavorful and made with ingredients that, generally, we all have in the kitchen or pantry. They are a rustic, nourishing and appetizing dish, perfect as a main course perhaps accompanied by a couple of slices of bread ready to do their job. Ingredients for the beans in homestyle sauce
- 3 cups canned borlotti beans (drained weight (approx. 17 oz))
- 9 oz zucchini (weight net of waste (about 2 medium zucchini))
- Half golden onion
- 1.5 cups tomato purée (passata)
- 3 oz speck (in sticks or diced)
- extra virgin olive oil
- salt
- black pepper

Preparation of the beans in homestyle sauce
Drain the borlotti beans from the preserving liquid and rinse them thoroughly under running water.
Trim the zucchini, wash them, pat them dry with kitchen paper and cut them into small pieces.
Peel the onion and chop it finely. I used a manual pull-string chopper which I find very convenient. If you wish to buy it you can find it by clicking HERE.
Heat a few tablespoons of oil in a pan before adding the onion and speck.
Sauté them for a couple of minutes, then add the zucchini.
Cook them for 4–5 minutes, then add the beans and let them absorb the flavors for a couple of minutes.
At this point, pour the tomato purée into the pan and season with salt to taste.
Continue cooking over medium heat for another five minutes, stirring often to prevent the beans from sticking to the bottom of the pan. If the sauce should become too dry, add a few tablespoons of hot water.
When cooked, adjust the salt if necessary and perfume the beans in homestyle sauce with freshly ground black pepper. Chopped parsley would be great here too, but I, however, forgot to add it. Sigh! Serve hot or warm. Enjoy! Paola.
