Ingredients for 6 Blackberry Ice Cream Bars
- 4 1/4 oz blackberries
- 3 tbsp granulated sugar
- 1 tbsp lemon juice
- 9 oz cream cheese
- 2/3 cup heavy cream
- 1/3 cup powdered sugar

- Immersion Blender
- 1 Strainer fine-mesh
- 2 Bowls
- Electric Whisks
- 1 Spatula
- Silicone Popsicle Mold
- 6 Sticks wooden
Preparation of Blackberry Ice Cream Bars
Wash the blackberries, pat them dry with paper towels, and put them in a saucepan with the granulated sugar and lemon juice.
Heat gently and cook for about 10 minutes over low heat, stirring occasionally.
Turn off the heat, transfer the mixture to an immersion blender cup, and blend.
Then place a fine-mesh strainer over the saucepan used for cooking the blackberries, and strain the mixture to remove all the seeds. Once you have a smooth sauce, let it cool completely. I prepared it the day before.
Pour the cream into a bowl and start whipping it with electric whisks, adding 2 tbsp of powdered sugar halfway through the process.
In another bowl, beat the cream cheese with the remaining powdered sugar (2 tbsp).
Then fold the whipped cream into the cream cheese using a spatula.
Finally, add the blackberry sauce and mix gently until you get a uniform color.
At this point, fill 6 molds of a popsicle mold with the mixture and insert the wooden sticks. If you don’t have a popsicle mold and wish to purchase one, you can find it by clicking HERE.
Transfer to the freezer for at least 6 hours or overnight. With this type of mold, removing the blackberry ice cream bars is very simple. Just press lightly at the base and pull from the stick.
