Bruschetta with Cherry Tomatoes and Onions

Mmmmmmmmmmm… how delicious these bruschetta with cherry tomatoes and onions are. And they’re also super easy to make. Beautiful to look at too, served on a wooden board: very rustic, indeed! Try them for a snack with friends or to accompany a tasty outdoor barbecue. I’m sure you’ll love them.

Ingredients for Bruschetta with Cherry Tomatoes

Below I haven’t specified the quantities of the various ingredients because they depend on how many bruschetta you want to prepare. Keep in mind that you can easily proceed “by eye.”

  • rustic bread (sliced)
  • cherry tomatoes (red and yellow)
  • garlic
  • basil
  • red onion
  • extra virgin olive oil
  • salt

  • 1 Electric grill

Preparation of Bruschetta with Cherry Tomatoes

  • Wash the cherry tomatoes, pat them dry with paper towels, and cut them into small pieces. I used red and yellow cherry tomatoes, but you can easily use just one type of tomato.

  • Transfer them to a bowl and add some basil torn by hand and a clove of garlic, peeled and halved. Finally, season with a pinch of salt and a drizzle of oil. Mix and let it rest for an hour or until ready to use (this way, the cherry tomatoes will absorb the flavors well).

  • Meanwhile, peel the onion and slice it into rings.

  • In a pan, heat a couple of tablespoons of oil and a tablespoon of water, and add the onion. Salt to taste and cook until softened (this will take about 5/6 minutes).

  • Slice the rustic bread and toast it under the oven grill, or on a ridged grill plate or a griddle. I used an electric grill.

    When the bread is toasted, you can rub it with a garlic clove to taste: this naturally depends on personal preference.

  • At this point, proceed to top the bread by placing cherry tomatoes and onion rings on each slice.

  • Decorate the bruschetta with cherry tomatoes and onions with a basil leaf and enjoy them immediately. Enjoy! Paola
