Cannellini Beans and Cherry Tomatoes

Are you short on time? Then you’ve come to the right place because this is a truly quick recipe. A very simple dish based on cannellini beans and cherry tomatoes that is prepared in just a few minutes. When I tried this recipe, I wasn’t very convinced about the result I could achieve, but I quickly changed my mind as soon as I was asked to make them again. BINGOOOOOO! Trust and try them because they are really very appetizing.

Ingredients for Cannellini Beans and Cherry Tomatoes

You can replace the onion with a clove of garlic if you prefer.

  • 17 oz canned cannellini beans (drained weight)
  • Half onion (red or golden)
  • 9 oz cherry tomatoes
  • A few leaves basil
  • dried tomato powder
  • extra virgin olive oil
  • salt
  • black pepper

  • 1 Colander
  • 1 Pan

Preparation of Cannellini Beans and Cherry Tomatoes

  • Drain the cannellini beans from the liquid in which they are preserved and rinse them well under running water.

  • Wash the cherry tomatoes and cut them into pieces.

  • In a pan, heat a couple of tablespoons of oil and sauté the finely chopped onion.

    Let it sizzle for a moment, then add the cherry tomatoes and cannellini beans.

  • Season with a generous pinch of salt, a grind of black pepper, and a generous sprinkle of dried tomato powder (you can find the recipe link to prepare it above the list of ingredients).

  • Cook on high heat, gently stirring from time to time for 3/4 minutes. Just before the end of cooking, scent with some basil leaves broken with your hands.

  • The cannellini beans and cherry tomatoes are ready right away. They are excellent both hot and at room temperature. A dish of embarrassing simplicity, but you will taste how appetizing it is! Enjoy! Paola
