Cauliflower with Tomato

Do you want to eat a really good and healthy side dish? Then you must try this cauliflower with tomato. It’s easy to prepare and very tasty. In short, the classic recipe that I call “nice & easy”.

Ingredients for Cauliflower with Tomato

  • 1.75 lbs cauliflower (weight net of waste)
  • 1.25 cups cherry tomatoes
  • 1 clove garlic
  • 1 tbsp tomato paste
  • 1 bunch parsley
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of Cauliflower with Tomato

  • Clean the cauliflower and divide it into florets.

  • Rinse them well under running water, then blanch them for 4/5 minutes in salted boiling water and drain with a slotted spoon. Keep some of this water for later to soften the side dish.

  • Meanwhile, wash the cherry tomatoes and cut them into small pieces.

  • Peel the garlic clove, remove the central germ and chop it finely, then fry it in a few tablespoons of oil in a large pan. Let it sizzle for a moment then add the cauliflower florets (I recommend cutting the larger ones in half) and sauté them for a couple of minutes, stirring gently.

  • Now add the tomato paste, cherry tomatoes, a generous pinch of salt, and a grind of black pepper and continue cooking for 8/10 minutes over low heat, adding a little of the cauliflower cooking water if the sauce dries out too much. Stir occasionally.

  • Once cooked, sprinkle the cauliflower with finely chopped parsley and serve immediately, very hot. Enjoy! Paola

    The cauliflower with tomato will be ready when you can easily pierce it with a fork. However, it should still be crunchy and not too soft. So keep an eye on it!
