The dish I propose today is perfect for those days suspended between summer and fall. The days are warm, the light is golden, but you start to catch the first scents of the forest. And it is precisely here that my Champignon Salad with a Gourmet Twist is born: fresh like an August lunch but with the personality of raw mushrooms, speck, and walnuts. A no-cook dish, simple yet surprising, ready in a few minutes and ideal for accompanying the changing seasons with taste and lightness. Here, the quantities are absolutely to taste: add more walnuts if you love crunchiness, an extra dash of mustard if you want more character, less speck if you prefer more lightness. Each bite will be a bridge between two seasons, simple, quick, and full of flavor. So take a bowl and let summer shake hands with fall!

Ingredients for the Champignon Salad
As I mentioned in the introduction above, the ingredients for this salad can easily be measured by eye. This also applies to the dressing. Feel free to increase or decrease them according to your personal taste
- 12 oz champignon mushrooms
- 3 oz lamb's lettuce (or valerian)
- 8 slices speck (thinly sliced)
- A few walnut halves
- sesame seeds (black or white)
- 1 tsp mustard (sweet or aromatic)
- 1 tsp lemon juice
- 2.5 tbsp extra virgin olive oil
- salt
- black pepper

- 1 Small bowl
Preparation of the Champignon Salad
Clean the champignon mushrooms by removing the earthy base of the stem. Quickly rinse them under running water, pat them dry with paper towels, and slice them thinly.
In a small bowl, mix the oil with the lemon juice, mustard, a pinch of salt, and a grind of black pepper.
Finally, place in a salad bowl or on a flat plate (as I did), the mushrooms, lamb’s lettuce, speck cut into strips, coarsely chopped walnuts, and sesame seeds.
Dress the champignon salad with the prepared dressing and let it absorb the flavors for a few minutes before serving. Enjoy! Paola
