Chard, in fact, is rich in antioxidants, vitamins, magnesium, and potassium. Furthermore, they promote the health of bones and the heart. Ingredients for Chard with Tomato
- 1.3 lbs chard
- 3.5 oz leek (net weight after discarding)
- 2.8 oz tomato puree
- 3.3 tbsp water
- chili pepper (quantity to taste)
- extra virgin olive oil
- salt
- black pepper

Preparation of Chard with Tomato
Cut off the end of the chard bunch, detach the leaves and wash them very well under running water.
Then separate the white stems from the green leaves.
Cut both the stems and the leaves into strips, keeping them separate.
Clean the leek by removing the roots, the outer sheath, and the darker green part. Wash it well and cut it into rings.
In a large pan, heat a few tablespoons of oil together with a pinch of chili pepper before adding the leeks and a couple of tablespoons of water. You can adjust the chili pepper to taste depending on personal preference.
Sauté over medium-low heat for 2/3 minutes, then add the sliced stems. Salt and pepper to taste and sauté for another 3 minutes, stirring often.
Then add the leaves as well, a pinch of salt, and sauté for another 2/3 minutes.
Meanwhile, in a small bowl, mix the tomato puree, a drizzle of oil, a pinch of salt, and the water.
Pour this mixture into the pan, add a tablespoon of tomato paste, and continue cooking for about ten minutes, stirring occasionally. If the vegetables become too dry, add a few more tablespoons of hot water.
When cooking is complete, turn off the heat and serve the chard with tomato immediately, piping hot. Enjoy! Paola
