Cheese Bites

Do you need a snack to accompany your aperitif? Then I suggest you try these tasty cheese bites. They are truly delicious finger foods and very easy to prepare. They are also perfect for a Sunday brunch if you usually enjoy this type of meal. Place them on a plate or a cutting board, and you will see that they will disappear quickly.

Ingredients for 15 Cheese Bites

  • 30 small crackers (like Ritz)
  • 3.5 oz robiola cheese
  • 2.8 oz spreadable goat cheese
  • 0.35 oz Pecorino Romano cheese
  • black pepper
  • poppy seeds

Tools

  • 2 Small Bowls
  • 1 Grater

Preparation of Cheese Bites

  • Place the robiola cheese, spreadable goat cheese, grated Pecorino, and a generous grind of black pepper in a small bowl. Mix until you obtain a smooth cream. 

  • Spread a bit of this cream on one cracker and cover it with a second cracker forming a sort of small sandwich.

  • Press slightly to squeeze out the excess cheese and remove it with the tip of a teaspoon or a small spatula.

  • Continue in this way until all the ingredients are used up. 

  • Pour some poppy seeds into a small bowl or dish and dip the cheese bites on one side only so that part remains white.

  • Arrange the cheese bites on the serving plate and serve them quickly to prevent the filling from moistening the crackers, causing them to lose their crunchiness. Enjoy! Paola
