Cheese Eggs

Ingredients for Cheese Eggs

You can, of course, prepare 4 eggs if there are four of you at the table. In this case, just increase the amount of cheese a little.

  • 9 oz caciocavallo cheese
  • 3 eggs (medium)
  • A few leaves parsley
  • extra virgin olive oil
  • salt
  • black pepper

  • 3 Small bowls

Preparation of Cheese Eggs

  • Remove the rind from the caciocavallo cheese and cut it into pieces or slices.

  • Separate the yolks from the whites, collecting the yolks in three small bowls to keep them separate.

  • In a pan, heat a few tablespoons of oil and arrange the cheese pieces to cover the entire bottom. 

  • When they begin to melt, pour the egg whites over them, distributing evenly.

  • Continue cooking over low heat until the whites begin to solidify. At this point, place the three yolks on top. Then season with salt and pepper to taste, cover with a lid, and continue cooking for a couple of minutes. 

  • Finally, turn off the heat and serve the cheese eggs immediately after sprinkling with finely chopped parsley. Enjoy! Paola
