Cheesy Zucchini

They seem easy… and they are! And they are also delicious. These are my cheesy zucchini, a tasty and appetizing side dish, even if not very light. But once in a while, it’s fine. Baking them with cheeses makes them extremely inviting, thanks to the crust that forms on top. A dish suitable for any occasion that I am sure everyone will love.

Ingredients for Cheesy Zucchini

  • 1.1 lbs zucchini (net weight after discarding)
  • 1 scallion
  • 1.5 tbsp butter (+ more for the baking dish)
  • 1.75 oz gouda
  • 1.75 oz fontina
  • 1 oz Grana Padano, grated (or Parmesan)
  • 0.5 cup heavy cream
  • salt
  • black pepper

Preparation of Cheesy Zucchini

  • Trim the zucchini, wash them, pat dry with paper towels, and cut them into quarters lengthwise. Then cut into pieces about 0.4 inches.

  • In a pan, melt the butter and sauté the finely chopped scallion. Then add the zucchini and stir-fry over medium heat for a minute, stirring constantly.

  • Season with salt and pepper to taste, then lower the heat, cover, and continue cooking for 10 minutes, stirring occasionally.

  • Meanwhile, cut the gouda and fontina into cubes. If you prefer, you can use just fontina.

  • Pour the cream into a small bowl, add 0.75 oz of grated cheese, and mix with a fork.

  • When the zucchini are ready, transfer them to a lightly buttered baking dish; add the cheese cubes and pour over the cream mixture. Finally, sprinkle the top with the remaining grated cheese (0.25 oz).

  • Bake the cheesy zucchini in a preheated static oven at 356°F for about ten minutes plus a few moments on the grill function: they should be golden and the cheeses perfectly melted at the end.
    Remove from the oven, let cool slightly, and serve directly from the baking dish. Enjoy! Paola
