Ingredients for Chicken Wings with Tomato Sauce
- 1.7 lbs chicken wings
- flour
- 1/4 cup dry white wine
- 7 oz tomato pulp
- 1 tbsp tomato paste
- 1 pinch sugar
- oregano (as much as desired)
- 1 shallot
- 1 tbsp capers
- 1 bunch parsley
- extra virgin olive oil
- salt
- black pepper

Preparation of Chicken Wings with Tomato Sauce
Pour the tomato pulp into a small bowl. Add a tablespoon of tomato paste, a pinch of sugar, a generous pinch of salt, and oregano. Mix well and set aside.
Remove any remaining hairs on the chicken wings. This operation can be done in two ways: plucking them with tweezers or singeing them over the stove flame.
Wash the chicken wings, pat them dry with paper towels, and cut them into two parts right at the joint.
Now flour them, shaking them slightly to remove the excess flour.
Peel and finely chop the shallot. I used a manual pull chopper which I find really convenient. If you wish to purchase it, you can find it by clicking HERE.
In a large saucepan, heat a few tablespoons of oil and a couple of tablespoons of water before adding the shallot.
Let it sizzle for a few moments, then add the chicken wings and sear them over medium-low heat for 5 minutes, turning them from time to time with tongs.
Moisten the wings with 1/4 cup of white wine and when the wine has evaporated and a creamy sauce has formed, add the seasoned tomato pulp and the capers rinsed under running water.
Gently stir to coat all the wings with the tomato sauce. Then lower the heat, cover, and continue cooking for about twenty minutes, stirring occasionally.
At the end of cooking, remove the lid and season the chicken wings with tomato sauce on each side with salt and black pepper to taste. Allow everything to flavor for a couple of minutes.
Serve the chicken wings with tomato sauce hot, accompanied by their cooking juices and sprinkled with finely chopped parsley. Enjoy! Paola
