Chocolate Salami with Pistachios

The chocolate salami with pistachios is a new variation of this dessert that I love. It is prepared easily and very quickly and does not require baking. A slice after lunch or dinner will allow you to end your meal on a sweet note. However, I can never limit myself to just one slice. Darn it! Knowing it’s in the freezer, any moment is good to munch on it.

Ingredients for Chocolate Salami with Pistachios

  • 10.5 oz Digestive biscuits (or plain cookies)
  • 7 tbsp butter
  • 1/2 cup sugar
  • 6 tbsp unsweetened cocoa powder
  • 1/2 cup pistachios (shelled)
  • 1 egg (medium)
  • 2 tbsp Marsala (30 ml)

Tools

  • 1 Bowl large
  • Electric whisk
  • Sieve fine mesh
  • Parchment paper

Preparation of Chocolate Salami with Pistachios

  • Remove the butter from the fridge, cut it into pieces, and let it soften at room temperature. It should only be soft but not melted.

  • Coarsely chop the pistachios. I recommend doing this with a knife because using a food processor might turn them into flour.

  • Also crumble the biscuits.

  • In a large bowl, place the sugar and egg and beat them with electric whisks until you get a light and fluffy mixture.

  • Add the now softened butter and work again with the whisks.

  • Then add the unsweetened cocoa by sifting it through a fine mesh sieve and incorporate it into the mixture with a spatula.

  • Flavor the dough with the liqueur: I used Marsala because it’s the only one I like, but rum is also fine. If you are making this dessert for children, you can omit it.

  • At this point, add the plain cookies and mix until they are perfectly blended into the dough.

  • Finally, add the chopped pistachios.

  • Transfer the obtained mixture onto a sheet of parchment paper and shape it into the classic salami form.

  • Wrap it in the parchment paper, roll the ends tightly, and place it in the freezer for at least two hours. Enjoy! Paola
