Cocoa and Hazelnut Cookies

No eggs or butter in the preparation of these DELICIOUS cocoa cookies enriched with hazelnut flour and lots of dark chocolate chips. And you don’t even need cookie cutters or a rolling pin to make them. They are perfect to accompany an afternoon tea with friends or just to enjoy when you crave something sweet, and they are ideal for those with egg intolerances. Such a simple yet so tasty recipe. Ingredients for Cocoa and Hazelnut Cookies

With these quantities, I made 15 cookies weighing about 25/28 g each.

If you can’t find hazelnut flour, you can finely grind the same quantity of peeled hazelnuts.

  • 1 cup type 1 flour
  • 5 tbsp unsweetened cocoa powder
  • 1/3 cup brown sugar
  • 1/4 cup water
  • 3 1/3 tbsp vegetable oil
  • 1/4 cup hazelnut flour
  • 1/2 cup chocolate chips
  • Half packet baking powder (8 g)
  • 15 whole hazelnuts (for decoration)

I prepared these cocoa cookies with the Thermomix, but I’ll also show you the procedure to follow if you don’t have this appliance.

  • 1 Bowl
  • 1 Baking tray
  • Parchment paper

Preparation of Cocoa and Hazelnut Cookies

  • Put the water, oil, and sugar in the bowl. Mix (10 sec, speed 5).

  • Then add the flour, cocoa, and baking powder. Mix again (10 sec, speed 5).

  • Finally, add the hazelnut flour and chocolate chips, and mix into the dough (15 sec, speed 4, reverse).

  • Take spoonfuls of the mixture and form balls with slightly oiled hands.

  • Place them on a baking tray lined with parchment paper, then put a whole hazelnut in the center of each ball.

  • Bake the cocoa and hazelnut cookies in a preheated static oven at 350°F for 15 minutes.
    Once out of the oven, let them cool completely before touching them. They are quite soft when first out of the oven but harden as they cool. Enjoy! Paola

  • Sift the flour, cocoa, and baking powder into a bowl. Add the hazelnut flour and brown sugar and mix.
    Then add the water and oil and knead everything well.
