Ingredients for Creamy Spaghetti with Peppers
- 9 oz spaghetti
- 1 red bell pepper
- 1 red onion (medium)
- 3.5 oz robiola cheese
- 1 bunch parsley
- extra virgin olive oil
- salt
- black pepper

Preparation of Creamy Spaghetti with Peppers
Peel the onion, wash it, and slice it.
Clean the peppers by removing the stem, seeds, and internal filaments. Wash them and cut them into strips.
In a large pan, heat three tablespoons of oil before adding the onion.
Let it sizzle for a couple of minutes, then add the peppers, a generous pinch of salt, a grind of black pepper, and two tablespoons of water.
Continue cooking over low heat for about ten minutes, stirring occasionally.
Then transfer everything to the cup of an immersion blender and blend until you get a smooth cream (if you wish, you can set aside some pepper strips to use for the final decoration of the dishes).
Return the pepper puree to the pan and add the robiola cheese. Stir to combine the ingredients and soften the sauce with a few tablespoons of pasta cooking water.
Then adjust salt and pepper to taste and add some finely chopped parsley for flavor.
Meanwhile, cook the spaghetti in plenty of boiling salted water; drain them al dente, but not too dry, keeping some cooking water aside. Transfer them directly into the sauce pan and mix all ingredients well. Use the reserved water to soften the sauce if necessary.
Distribute the creamy spaghetti with peppers on individual plates, decorate with some pepper strips, and serve immediately, hot. Enjoy! Paola
