Flavorful Cutlets

Even when you can only dedicate a little time to cooking, the important thing is not to give up on flavor. This is my personal philosophy. Do you agree? I assure you that it’s possible to bring something good to the table even if you’re short on time. And these flavorful cutlets are proof because they are quick to prepare and really super tasty. Few ingredients, few steps, and the dish is served.

Ingredients for Flavorful Cutlets

The quantities below are for two people. If you want to prepare these flavorful cutlets for four people, simply double all the amounts.

  • 10.5 oz pork loin (sliced)
  • flour
  • 2 anchovy fillets in oil
  • 2.5 tbsp lemon juice (half a lemon)
  • 2 tsp Dijon mustard
  • 1 bunch parsley
  • extra virgin olive oil
  • salt
  • black pepper

Tools

  • Meat mallet
  • 1 Plate
  • Citrus juicer
  • 1 Small bowl
  • 1 Pan

Preparation of Flavorful Cutlets

  • Thin the pork loin slices a little by pounding them with a meat mallet and make a few small cuts on the sides so they don’t curl up during cooking.

    Then coat them in flour and shake to remove the excess.

  • In a small bowl, combine the juice of half a lemon, 1 tbsp of oil, Dijon mustard, and a tablespoon of finely chopped parsley and emulsify everything together.

  • In a large pan, heat a few tablespoons of oil, then add the anchovy fillets and let them melt while pressing them with the back of a wooden spoon.

  • Then add the meat slices and brown them for 2/3 minutes on each side, turning them with tongs.

  • At this point, drizzle them with the prepared emulsion and continue cooking for 5/6 minutes over medium heat. Gradually, the sauce will begin to thicken. If you want to soften the lemon flavor, you can thin the sauce with a bit of hot broth.

  • At the end of cooking, season with salt and pepper to taste and garnish with fresh parsley. Serve the flavorful cutlets immediately, while hot. Enjoy! Paola
