Flavorful Peppers

What’s cooking today? Well… in the pot, nothing. Today I offer you a simple but flavorful side dish: my flavorful peppers. They are baked (or roasted on a grill pan), peeled, and seasoned with a fragrant sauce made of parsley, garlic, capers, anchovies, and green olives. A Mediterranean dish, colorful and irresistible, perfect to accompany meat or fish dishes, but also great as an appetizer on a slice of crusty bread. They are easy to prepare and ideal to serve either warm or cold. I guarantee they will be a success and will win everyone over with their flavor that speaks of summer.

Ingredients for Flavorful Peppers

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 clove garlic (½ if large)
  • 1 tablespoon pickled capers
  • 2 anchovy fillets in oil
  • 1 bunch parsley (about 10 g)
  • 1 oz green olives
  • extra virgin olive oil
  • salt
  • black pepper

  • 1 Small Bowl
  • 1 Baking Tray

Preparation of Flavorful Peppers

  • Wash the peppers, dry them, remove all seeds and white internal filaments, and cut them into strips.

  • Place them on a baking tray lined with parchment paper and bake for 10 minutes in a preheated static oven at 356°F, then turn them and bake for another 10 minutes. Finally, switch to grill mode until they are well roasted. This will take about another five minutes. Alternatively, as I mentioned in the introduction, you can grill the peppers on a grill pan or on a hot griddle, turning them often.

  • Remove the peppers from the oven, peel off the burnt skin (this will make them even more digestible), and place them on a serving dish.

  • Wash and dry the parsley leaves and chop them together with the garlic, capers, anchovy fillets, and green olives.

  • Transfer the mixture into a small bowl and add a few tablespoons of oil and a grind of black pepper. Adjust salt only if necessary (I didn’t add any because capers and anchovies are already very flavorful).

  • Season the peppers with the prepared sauce and let them marinate for a few minutes (I prepared them a couple of hours in advance). Serve the flavorful peppers at room temperature. Enjoy! Paola
