Flavorful Pumpkin Pasta

Why do you think I called it flavorful pumpkin pasta? Because it’s really delicious, of course. One of the ingredients is sausage, which I find perfectly matches the sweet taste of pumpkin. Another ingredient is cabbage, which is cooked with the pasta and goes perfectly with it. The preparation of this dish is simple and I guarantee the result without any doubt. A pasta dish suitable for a family lunch that will definitely ask you to replicate.

Ingredients for Flavorful Pumpkin Pasta

  • 12 oz short pasta (any shape you like)
  • 2 1/4 cups pumpkin (weight without waste)
  • 9 oz sausage
  • 1 1/4 cups cabbage (weight without waste)
  • 1 shallot
  • 1/3 cup dry white wine
  • 1 bunch parsley
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of Flavorful Pumpkin Pasta

  • Wash the cabbage leaves, remove the hard central rib, and cut them into strips.

  • Peel the shallot and chop it finely. I used a manual string chopper, which I find very convenient. If you want to buy it, you can find it by clicking HERE.

  • Remove the pumpkin skin, seeds, and internal fibers. Wash it, pat it dry with a paper towel, and cut it into cubes. Do not throw away the pumpkin skin. It’s delicious. Read HERE how to use it. 

  • Remove the casing from the sausages and crumble them with a fork.

  • In a large pan, heat a few tablespoons of oil before adding the shallot. 

  • Let it sizzle for a few moments, then add the sausage and brown it for 3/4 minutes, stirring often.

  • Then add the pumpkin, brown it for a couple of minutes, then pour in the white wine. Increase the heat and let it evaporate. 

  • Once the wine has evaporated, lower the heat and continue cooking for about ten minutes. Finally, season with salt and pepper.

  • Meanwhile, bring a large pot of salted water to a boil. When it boils, drop the pasta in along with the cabbage strips.

  • When the pasta is al dente, drain it and transfer it directly to the pan with the sauce. Stir to mix all the ingredients well and garnish with chopped parsley. 

  • Serve the flavorful pumpkin pasta in individual plates, sprinkle it with freshly ground black pepper, and serve immediately, hot. Enjoy! Paola
