Ginger and Lemon Granita

A truly refreshing and delicious dessert I suggest to you today. It’s a ginger and lemon granita that you can whip up quickly and is perfect to serve on hot summer days. You won’t believe it, but I love enjoying granitas even in winter, and I think I’ll repeat this one in all seasons. So, if you love this root with surprising properties, try the granita, make it again, and enjoy it often. It’s also very convenient because you can prepare it in advance, keep it in the freezer until the last moment, and grind it only when you need to serve it. So, it’s ideal even for unexpected guests.

Ingredients for ginger and lemon granita

  • 0.35 oz fresh ginger (weight after peeling)
  • 3/4 cup sugar
  • 1 lemon
  • 1 1/4 cups water

I made this ginger and lemon granita with a Thermomix, but you can use any other food processor capable of crushing ice.

  • 1 Food processor
  • Molds for ice
  • 2 Glasses

Preparation of ginger and lemon granita

  • Peel the fresh ginger and cut it into pieces, then put them in the bowl along with the sugar and grind (5 sec. speed 8).

    Squeeze the lemon and add the juice to the bowl along with the water. Mix (5 sec. speed 8).

    To extract more juice from the lemon, press and roll it on the work surface before cutting it in half. This way, the fibers inside break and it’s easier to extract the juice.

    GINGER AND LEMON GRANITA - PREPARATION
  • At this point, pour the obtained liquid into the ice molds and put them in the freezer for at least 12 hours.

  • After this time, remove the granita cubes from the freezer, transfer them to the bowl, and grind (5 sec. speed 5). This way you get a very fine granita. If you prefer it coarser, reduce the time when grinding.

  • Pour the ginger and lemon granita into individual glasses and serve immediately, decorating as desired. Enjoy! Paola
