Preparation of Gorgonzola Saltimbocca

  • Peel the orange slices and cut them into pieces. 

  • Place a piece of orange slice and a dollop of gorgonzola with mascarpone inside a small single-serving spoon. If you prefer, you can use sweet gorgonzola. I chose the one mixed with mascarpone because it’s a bit more delicate and I found it more suitable for this preparation.

  • Add a piece of walnut and drizzle with a bit of honey.

  • These gorgonzola saltimbocca can be prepared in advance and stored in the refrigerator. However, in this case, do not add the carasau chips immediately or they will lose their crunchiness. Insert them on the spoons only when serving. Enjoy! Paola
