These green tomatoes are a perfect example: a fresh recipe, with no cooking required (except for the few moments to toast the almonds), ready in just a few minutes but capable of winning over with every bite. The key, of course, is the revisited green sauce: not just basil and capers, but also lemon zest and toasted almonds, for a perfect aromatic balance. The result? Ingredients for Gourmet Green Tomatoes
- 2 beefsteak tomatoes
- 1 bunch basil leaves (7/8 g)
- 0.7 oz peeled almonds
- 1 tablespoon salted capers
- lemon zest (a few pieces)
- sesame seeds
- chives (a few stalks)
- fleur de sel
- 2.7 tablespoons extra virgin olive oil
- salt
- black pepper

Preparation of Gourmet Green Tomatoes
Wash the tomatoes, pat them dry with kitchen paper, and slice them thickly. Alternatively, you can also cut them into wedges. Preferably use tomatoes that are not too ripe and firm. Then arrange them on the serving plate.
Heat a small pan well and toast the almonds over medium flame without any seasoning, stirring them until they turn slightly golden. This way they will release a more intense aroma. Remove them from the pan and set them aside.
Wash and dry the basil leaves and put them in a blender with the toasted almonds, desalted capers, a few pieces of lemon zest peeled with a vegetable peeler (only the yellow part, please) and the oil.
Blend intermittently until you get a coarse sauce: you should be able to perceive the almonds.
Transfer it into a small bowl and adjust salt and pepper to taste.
Spread this sauce over the tomatoes, add some chopped chives with scissors, season with salt flakes (fleur de sel) and sprinkle everything with sesame seeds. Optionally, you can drizzle with a few drops of vinegar or lemon juice.
Let the gourmet green tomatoes marinade for about ten minutes at room temperature before tasting them. You can prepare the sauce in advance, but I recommend dressing the tomatoes just before serving, to avoid the salt making them release too much water. Enjoy! Paola
