Ingredients for the Grape Baked Cream
- 3.5 oz white grapes (seedless)
- 1 tsp cornstarch
- 1 cup milk
- 2 eggs (medium)
- 1/4 cup sugar
- butter (for the ramekins)
- A few white grapes
Tools
- 1 Bowl
- 1 Sieve fine mesh
- 1 Hand whisk
- 3 Ramekins single-serve with a diameter of 4 inches
Preparation of the Grape Baked Cream
Wash the grapes and cut them in half. I recommend buying seedless grapes to avoid having to remove them all at this stage.
Sift the cornstarch into a bowl through a small fine mesh sieve. Add the milk and mix very well with a small hand whisk until you get a liquid mixture completely free of lumps.
Add the eggs, one at a time, incorporating them while continuing to stir with the whisk.
Then add the sugar and the grape halves.
Pour the mixture into three small buttered single-serve ramekins with a diameter of 4 inches.
Place them in a baking dish, pour some water on the bottom, and bake them in a water bath in a preheated static oven at 350°F for 30 minutes.
Take them out of the oven, distribute more grape halves on the surface, and let them cool completely (it will take about an hour). Once cooled, transfer them to the refrigerator for at least two hours.
Serve the grape baked cream well chilled and directly in the baking dish. Enjoy! Paola
