The grated cake I present to you today is a simple and rustic dessert with a crumbly texture and a delicate flavor. Perfect for walnut lovers, which are one of the main ingredients of this preparation. Unlike the usual “crumb cakes,” this one has no filling. A four-season cake, although many will consider it more suitable for autumn and winter. I made it in spring, for example, and loved it right away. Making it is very simple; you don’t even need electric beaters. If you find walnut flour, you won’t even need a food processor, just a bowl will do. Don’t miss the recipe!

Ingredients for the Grated Cake

  • 2 1/2 cups all-purpose flour
  • 2/3 cup butter
  • 1 1/2 cups walnut kernels
  • 3/4 cup sugar
  • 1 egg (medium)
  • Half packet baking powder (8 g)
  • powdered sugar (for decoration)

Tools

  • 1 Food Processor
  • 1 Bowl
  • 1 Sieve fine mesh
  • 1 Cake Pan 9 inches in diameter

Preparation of the Grated Cake

  • And here is the slice!

  • Melt the butter in a bain-marie or microwave.

  • Chop the walnuts.

  • Then add them to the butter and mix.

  • Gradually add the flour, sifting it together with the baking powder through a fine-mesh sieve. You probably don’t need to sift it, but I preferred to do so.

  • Then add the egg.

  • Finally, add the sugar.

  • At this point, start working the dough with your hands to perfectly blend the ingredients and form large crumbs.

  • Pour the mixture into a 9-inch diameter cake pan previously lined with parchment paper or buttered and floured, or brushed with release agent and distribute it evenly without pressing it down.

  • Bake the grated cake in a preheated static oven at 350°F for 35 minutes or until it is slightly golden on the surface. Take it out of the oven and let it cool before handling and removing it from the pan. When freshly baked it is very soft but hardens as it cools.

  • Once cooled, you can sprinkle it with powdered sugar. Enjoy! Paola
