“What side dish should I prepare today?” Coming back from school, that’s the question I asked myself. I wanted something tasty, but I didn’t have much time to cook. The solution came from the refrigerator, as always. There were so many beautiful cherry tomatoes that I absolutely love. It would have been logical to wash them, cut them, and season them. Side dish quickly done! But what about the blog? No quick recipe? And then I had the simple and quick idea: gratinated cherry tomatoes. With their crispy crust, they were a hit. Try them!

Ingredients for Gratinated Cherry Tomatoes
For this recipe, you can use your preferred cherry tomatoes: datterini, cherry, or yellow tomatoes.
- 21 oz cherry tomatoes
- 3 tbsp breadcrumbs
- 0.7 oz grated Grana Padano (or Parmesan)
- 1 bunch parsley
- 1 tbsp capers
- extra virgin olive oil
- salt

- 1 Small Bowl
- 1 Baking Dish oven
Preparation of Gratinated Cherry Tomatoes
Wash the cherry tomatoes well, pat them dry with kitchen paper, and cut them in half.
Grease an oven dish with a drizzle of oil, place the cherry tomatoes cut side up, and lightly salt them.
In a small bowl, mix the breadcrumbs with the grated cheese.
Chop the capers together with the parsley and add them to the breadcrumbs. You can use either salted or pickled capers. In both cases, rinse them well under running water and dry them with kitchen paper.
Distribute this mixture evenly over the cherry tomatoes and drizzle with a little oil.
Cook in a preheated static oven at 350°F for 10 minutes, plus a few more minutes under the grill function until a nice golden and crispy crust forms.
Remove the gratinated cherry tomatoes from the oven and let them cool slightly before serving. Enjoy! Paola
