About ten minutes of preparation, just over a quarter of an hour of cooking, and you’ll be ready to serve this delicious tray of gratinated cod. I assure you that those fillets will be a hit. The super crunchy coating makes them sooooo appetizing. Even kids will love them.

Ingredients for the gratinated cod
I used frozen fillets that I moved from the freezer to the fridge the night before to let them thaw slowly. If you prefer, you can use fresh fish.
If you want to reduce the calories of this dish, replace the taralli with simple breadcrumbs to mix with the other chopped ingredients. Sure, the crunchiness of taralli is unbeatable.
- 1.3 lbs cod fillets
- 2 leaves sage
- 1 sprig rosemary
- Half clove garlic
- 5.3 oz taralli
- 2 tsp dry white wine
- 2 tbsps extra virgin olive oil
- salt
- black pepper

Preparation of gratinated cod
Place the taralli, two sage leaves, the needles from one sprig of rosemary, half a peeled garlic clove, a pinch of salt, a grind of black pepper, 4 tsps of oil, and 2 tsps of white wine in a food processor and chop until you have a coarse crumb mixture. With the Thermomix, I chopped for 7 seconds at speed 5.
Place the cod fillets inside a baking tray lined with parchment paper.
Brush them with the remaining oil (2 tsps) and season with salt and pepper to taste.
Then distribute the prepared coating over all the fillets, pressing lightly with a spoon to adhere well to the fish.
Bake the cod fillets in a preheated fan oven at 374°F for 15/20 minutes or until golden. The cooking time may vary depending on the size of your fillets.
Remove the gratinated cod from the oven and serve immediately, piping hot. Enjoy! Paola
