Gratinated peaches are a dish with the warm colors of the sun and offer an alternative way to enjoy this summer fruit. They are very easy to prepare and great either warm or cold. Just accompany them with a scoop of vanilla ice cream to transform them into a respectable dessert. I assure you that they will be very appreciated by those at your table. Shall we bet?

Ingredients for Gratinated Peaches

  • 3 peaches
  • 1 lemon (untreated)
  • 3 tbsp honey
  • 1 cinnamon stick
  • 1.5 tbsp butter (+ extra for the baking dish)
  • sliced almonds
  • 0.7 oz amaretti

Preparation of Gratinated Peaches

  • Wash the peaches, pat them dry with paper towels, cut them in half, and remove the pit. Then divide each half into 3 wedges.

  • Transfer the wedges to a plate and drizzle them with the juice of half a lemon. 

    Since we’ll also need the zest of this lemon, I recommend taking it before squeezing the juice. I used a lemon zester which allowed me to obtain strips. If you don’t have one and wish to purchase it, you can find it HERE. Alternatively, you can use a citrus grater.

  • Then place the wedges inside a lightly buttered oven-safe baking dish. 

  • In a pan, melt the butter, then add a piece of cinnamon and three tablespoons of honey. 

    Let it simmer for a couple of minutes and, just before turning off the heat, add the grated or zested lemon peel. 

  • Pour the sauce obtained over the peaches, then add the sliced almonds. 

  • Crush the amaretti (I used a meat tenderizer, but a glass works well too) and sprinkle them over the peaches.

  • Place the baking dish in a preheated static oven at 392°F and bake for 15 minutes. Let the gratinated peaches cool slightly before serving. They are excellent warm but also cold.
