Green Beans and Tomatoes

This side dish made with green beans and tomatoes is simple to prepare and truly flavorful. The longest and most tedious part is cleaning the beans. If you prefer, you can make this recipe in a light and vegan version by simply omitting the pancetta. However, I tell you that this combination makes the dish more tempting and appetizing even if, alas, more caloric.

Ingredients for Green Beans and Tomatoes

  • 1.1 lbs green beans
  • 9 oz tomatoes
  • 1 clove garlic
  • 3.5 oz smoked pancetta (diced)
  • 1 bunch parsley
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of Green Beans and Tomatoes

  • Trim the green beans, wash them, and cut them in half. Then boil them in salted water for 8/10 minutes.

  • Meanwhile, wash the tomatoes, pat them dry with a paper towel, and cut them into pieces. 

  • In a large pan, heat a few tablespoons of oil and sauté the minced garlic clove (if you don’t like garlic, you can also leave it whole and remove it at the end of cooking).

    Add the diced smoked pancetta and brown it for a couple of minutes.

  • Then add the green beans and tomatoes, stir gently and let them flavor for 5 minutes.

    When finished cooking, adjust salt and pepper to taste. 

  • Sprinkle the green beans and tomatoes side dish with chopped parsley before serving.
