Ingredients for Baked Swordfish
- 4 slices swordfish (approximately 1.75 lbs)
- 3 vine tomatoes
- 2 yellow onions
- 2 cloves garlic
- 3 leaves bay leaf
- 1/3 cup dry white wine
- 1 bunch parsley
- extra virgin olive oil
- salt
- black pepper

Preparation of Baked Swordfish
Wash the tomatoes, cut them into wedges, remove most of the seeds, and pat them dry with kitchen paper.
Peel the onions and also cut them into wedges.
Grease the bottom and sides of a baking pan with oil and place the swordfish slices in it without overlapping.
Distribute the tomatoes and onions on top.
Then add the two peeled garlic cloves cut in half and the bay leaves. Season everything with a few tablespoons of oil, a couple of pinches of salt, and a generous grind of black pepper, and drizzle with the white wine.
Bake in a preheated static oven at 350°F for 20 minutes. Serve the baked swordfish hot. Enjoy! Paola.
